LatAsian? Yes, that’s right. It’s a Latin and Asian dish. What could be more culturally diverse AND meat-free? A little spicy and a little ricey. Enjoy!

INGREDIENTS

  • 4 cups uncooked brown rice
  • 2 pounds BtB Asian Chicken-free Chunks
  • 4 teaspoons canola oil
  • 2 cups chunky salsa
  • 3 tablespoons minced fresh cilantro

DIRECTIONS

Cook rice according to package directions. Meanwhile, in a large nonstick skillet, cook BtB Asian chicken-free chunks in oil over medium heat for 5 minutes or until lightly browned.

Stir in the salsa. Bring to a boil. Reduce heat; simmer, uncovered, for 2 minutes. Sprinkle with cilantro. Serve with brown rice.

Yield: 8 servings.
