UNCUT Chorizo Tofu Scramble
Serves 4

Ingredients:

1 pound UNCUT Chorizo Ground
12 oz of extra firm tofu
Juice of 1 lime
½ jalapeno, finely chopped
½ teaspoon garlic powder
½ teaspoon chili powder
¼ teaspoon cumin
¼ teaspoon paprika
¼ teaspoon tumeric
1 tablespoon water
Salsa and sliced avocados

Instructions:
Drain tofu and press between sheets of paper towels with something heavy for 15-20 minutes. Crumble the dried tofu with a fork so it looks like scrambles eggs. Add tofu, lime juice and jalapeno to a heated pan and sauté for about 2-3 minutes over medium heat.

Combine in a small bowl; garlic powder, chili powder, cumin, paprika, turmeric and water to make a sauce. Pour sauce over the tofu and cook for another 5 minutes, stirring frequently.

Add UNCUT chorizo to the pan and sauté mixing with the tofu for another 5 minutes. Serve with a side of salsa and sliced avocado.
